Chocolate Italian Buttercream

Ingredients:
5 ounces sugar
1.5 ounces water
2 large egg whites
8 ounces butter, room temperature
6 ounces semisweet chocolate, melted

Instructions:
1. In a small pot, cook sugar and water to 244F.
2. While sugar is cooking, whip egg whites to medium peaks in a stand mixer with whip attachment.
3. With mixer running at high speed, slowly add boiling sugar to egg whites. Egg whites will turn glossy and bowl will be very hot. Keep mixing until the bowl is only warm to the touch.
4. Add butter, a little at a time, until fully incorporated.
5. Add melted chocolate and mix until thoroughly combined.
