Caramel Coconut Pecan Cupcake Filling

Ingredients:
8 ounces sugar
2 ounces water
2 cups shredded coconut
1 cup chopped pecans
8 ounces heavy cream
1 tablespoon bourbon
2 ounces room temperature butter

Instructions:
1. Cook sugar and water to a medium caramel, around 330F.
2. Add coconut and pecans and stir constantly. Cook to 300F.
3. Add cream and cook to 240F stirring constantly.
4. Dip pot into water bath to stop cooking. Cool to below 170.
5. Mix in bourbon and butter.
