Bourbon Pecan Salted Caramels

Ingredients:
1 pound 14 ounces sugar
8 ounces water
8 ounces corn syrup
1/2 teaspoons cream of tartar
1/2 teaspoons fine salt
10 ounces fine chopped pecans
16 ounces heavy whipping cream
4 ounces butter
2.7 ounces bourbon
2 tsp coarse salt

Instructions:
1. Cook sugar, water, corn syrup, cream of tartar, and salt to a medium caramel, temperature will be over 320F.
2. Add pecans, stir and cook to 300F.
3. Add cream and butter. Stir and cook to 300.
4. Dip pot into water bath to stop cooking. Cool caramel in water bath to below 200F but above 160F.
5. Add bourbon and mix into caramel.
6. Pour into a 9x13pan lined with parchment, sprinkle with coarse salt.
7. Cut into ¾ inch squares and wrap individually with cellophane
