Ingredients:
8 ounces GF Cake Flour
1 ounce almond flour
8.8 ounces sugar
2 teaspoons baking powder 1/2 teaspoon salt
2 teaspoons cinnamon
3 ounces chopped pecans
4.6 ounces water
3 large eggs
7 ounces canola oil
1 teaspoon vanilla extract
10 ounces shredded carrot

Instructions:
1. In a bowl sift together gf cake flour, almond flour sugar, baking powder, salt, and cinnamon. Add pecans.

3. In a separate bowl mix water, eggs, canola oil, vanilla, and shredded carrot.

4. Pour liquid ingredients over dry ingredients and blend until well combined.

5. Scale into 24 standard cupcakes, 2-9 inch round pans, or 1-9x13 pan. 6. Bake at 375 for 18-22 minutes for cupcakes, 18-22 minutes for rounds, or 20-24 minutes for 9x13.
