Gluten Free Biscuits

Ingredients:
9.5 ounces GF Cake Flour
0.5 ounces white masarepa*
0.1 ounces xanthan
0.8 ounces baking powder
0.2 ounces salt
4 ounces butter
1 ounce honey
10 ounces milk

Instructions:
1. Combine GF cake flour, masarepa, xanthan, salt, and baking powder.

2. Grate butter through medium holes on box grater. Rub into flour mixture.

3. Add honey and milk stir to combine.

4. Allow dough to rest in Fridge 20 minutes.

5. Scale and Pan.**

6. Bake at 400F for 10-20 minutes

* Fine Ground White Cornmeal may be used in place of masarepa.

**Scaling and Panning: For drop biscuits portion using a 2 ounce disher For Rolled Biscuits roll out on a surface floured with equal parts cornstarch and potato starch. Roll to between 3/8 and ½ inches. Cut into circles between 1.5 and 3 inches.
