GF Chocolate Cake

This recipe is great made into cupcakes filled with Caramel Coconut Pecan Filling and iced with Chocolate Italian Buttercream.

Gluten Free Chocolate Cake

Ingredients:
10 ounces GF Cake Flour
8.5 ounces brown sugar
0.2 ounces baking soda
0.2 ounces baking powder
0.1 ounces salt
8.5 ounces semi-sweet chocolate chips
8.5 ounces boiling water
8 ounces neutral oil (I use canola)
4.7 ounces lowfat buttermilk
2 whole eggs
2 egg yolks

Instructions:
1. Pour hot water over semi-sweet chocolate chips, let sit 5 minutes.

2. In a separate bowl sift together gf cake flour, baking powder, baking soda, and salt.

3. Mix water and chocolate together and insure that all chocolate is melted. Add brown sugar, buttermilk, oil, whole eggs, and egg yolks. Mix together.

4. Pour liquid ingredients over dry ingredients and whisk until well combined.

5. Scale into 24 standard cupcakes, 2-9 inch round pans, or 1-9x13 pan. 6. Bake at 375 for 18-22 minutes for cupcakes, 18-22 minutes for rounds, or 20-24 minutes for 9x13.
